Ingredients:
- 2tbsp canola oil
- 2 cups of tofu, drained and cubed
- 2tbsp butter
- 1 small onion
- 5cloves garlic
- 1/4 cup sliced ginger
- 2 cups coconut milk (gata)
- 1/4 cup curry powder
- Salt
- Ground black pepper
Procedure:
- Heat the canola oil over medium heat and fry the tofu
- Once the tofu is brown on the sides and a little crispy, you may remove it from the pan and drain on paper towels.
- In the same pan, melt the butter and saute the garlic, onion, and ginger.
- Once the onion is translucent you may add the coconut milk and curry powder. Stir and let it simmer for about 10-15 minutes.
- Season with salt and pepper, and serve.
Note: Its up to you if you want to stir in the tofu into the sauce once the sauce is cooked so you can serve it as one savory dish. I personally prefer separating the sauce because I want my tofu crispy and not soggy. But it's your call!
I tried this some nights ago and it was a hit! The Husband loved it he wanted me to turn the sauce into a noodle soup! Haha!
