#LengCooks Crispy Fried Tofu with Thai Curry Sauce

Crispy Fried Tofu with Thai Curry Sauce

Ingredients:

  • 2tbsp canola oil
  • 2 cups of tofu, drained and cubed
  • 2tbsp butter
  • 1 small onion
  • 5cloves garlic
  • 1/4 cup sliced ginger
  • 2 cups coconut milk (gata)
  • 1/4 cup curry powder
  • Salt
  • Ground black pepper

Procedure:

  1. Heat the canola oil over medium heat and fry the tofu
  2. Once the tofu is brown on the sides and a little crispy, you may remove it from the pan and drain on paper towels.
  3. In the same pan, melt the butter and saute the garlic, onion, and ginger.
  4. Once the onion is translucent you may add the coconut milk and curry powder. Stir and let it simmer for about 10-15 minutes.
  5. Season with salt and pepper, and serve.

Note: Its up to you if you want to stir in the tofu into the sauce once the sauce is cooked so you can serve it as one savory dish. I personally prefer separating the sauce because I want my tofu crispy and not soggy. But it's your call!

I tried this some nights ago and it was a hit! The Husband loved it he wanted me to turn the sauce into a noodle soup! Haha!
